Beet, Tomato, Spinach and Goat Cheese Pizza


Oh Hi, Hey there....*finger wave from across the room*...is it cheating if its with a pizza, I don't know, I just can't help myself. Woh, back to reality...but seriously, Pizza is just one of those foods I can't tire of. Now don't get me wrong, a traditional greasy cheesy pepperoni slice owns my heart, however, this very different / healthy twist certainly gives my tried and true love a run for it's money. Here's how I make it...


Preheat oven to 400 degrees.


Find a circular pizza pan and spray with a light coating of cooking oil.


Now grab your 16oz package of prepared pizza dough *bonus points for whole wheat pizza dough if you can find it*. Spread dough into the circular pizza pan and drizzle a light coat of olive oil on top.


Place pizza dough in oven and pre-bake for 10 minutes on middle rack. Remove.


Next, add the ingredients of your choice...Here's what I recommend:

  • Beets, sliced very thin

  • Cherry Tomatoes sliced in half

  • Spinach cut into ribbons

  • Goat Cheese crumbled on top

After you've placed your toppings, drizzle with a bit more olive oil, salt, pepper, sprinkle a bit of garlic powder and bake pie for 15-20 more minutes -- check bottom of pan after 15 minutes in the oven to make sure pie is not burning on the bottom -- if it gets darker than you would prefer, you can move pie up to the top rack.
